My recent blog How to choose the perfect Pineapple mentioned white pineapples. That got me several questions from readers who had never heard of this delicacy. So here is a brief introduction to that rare and expensive variety of this ever-popular fruit.
A white pineapple's fruit is actually white, not at all yellow and far from the bright yellow of a ripe fruit of the common variety. It's fruit is also softer, much less acidic and is sweeter than the common yellow/golden variety. The fibrous core of the white pineapple is much softer too. Unlike the yellow variety the white's core is completely edible.
Aficionados have described its flavor as a "heavenly balance" of sweetness and slight acidity. And they are more than willing to pay the $25 price tag for a single fruit.

True white pineapples not hybrids, they're a natural variety that is more difficult to grow for production than the more common golden pineapple. That's why they are so rare, and why they are much more expensive than their yellow cousins.
